To celebrate National Nutrition Month, we’re having a CHI St. Vincent Co-worker Healthy Recipe Contest. And to kick it off, here’s a healthy recipe by CHI St. Vincent physician Randy Hill, celebrity chef with Southern Krunk BBQ Society with appearances on TV shows BBQ Pitmasters, BBQ Crawl and Cutthroat Kitchen.
Grilled Shrimp With Mango Salsa (from Cutthroat Kitchen)
Ingredients: 3 ears of corn; 1 can of black beans (drained); 1 chopped mango; 2 limes, Cilantro, Shrimp, Cajun spice, Olive Oil and 1 Orange, 1 tablespoon of honey.
Mango Salsa Recipe: Grill the three ears of corn and remove kernels from the cob. Mix kernels with the can of drained black beans, chopped mango, juice from one lime and cilantro to taste.
Grilled shrimp recipe: Drizzle olive oil and Cajun seasoning over shrimp and grill. When grilled, glaze shrimp with honey and the juice from one lime and one orange.
